Thai beef skewers with fried asparagus

Number of servings: 4. Preparation time: marinating 60 min., baking 10 min.

This recipe for Thai Beef Rings with Roasted Asparagus is one version of the rings, a delicious, multi-bite oriental treat on a stick. With this smoky dinner, the wine from South Africa tall horse pinotage, which has aromas of ripe fruit, silky tannins and aftertastes of coffee and chocolate, is recommended to drink with grilled meat.

INGREDIENTS

For the beef patties:

  • 500 gr. beef tenderloin
  • 3 chopped cloves of garlic
  • handful of chopped fresh coriander
  • 4 hours soy sauce
  • 4 hours of toasted sesame oil
  • 4 hours lemon juice (preferably green)
  • 2 hours liquid honey
  • 1 tbsp. ground pepper mixture
  • sesame seeds (for sprinkling)
  • about 20 pcs. bamboo skewers

For the fried asparagus:

  • 250 gr. fresh green asparagus
  • 1 tbsp. of toasted sesame oil
  • 1 tbsp. soy sauce
  • 0.5 tbsp. ground pepper mixture
  • sesame seeds (for sprinkling)

For the fried onion letters:

  • a bunch of fresh onion leaves
  • 1 tbsp. of toasted sesame oil
  • 1 tbsp. soy sauce
  • 0.5 tbsp. ground pepper mixture
  • sesame seeds (for sprinkling

PREPARATION

First, I cut the beef tenderloin into thin strips. The ones that were too big I cut in half again. I threaded the cut pieces of meat onto the water-soaked skewers.

I prepared the meat marinade: I mixed sesame oil, soy sauce, honey, lemon juice, pepper and chopped garlic with chopped coriander. I poured this marinade over the meat strung on skewers and marinated it for about an hour.

I peeled the asparagus thinly, cut off the tips and threaded them with four toothpicks to make it easier to flip them while cooking. I poured the prepared asparagus with sesame oil mixed with soy sauce and sprinkled with pepper.

I poured clean onion leaves with the same marinade. I marinated the vegetables for about half an hour.

On direct fire, i.e. I cooked the beef rings over hot coals for 2 minutes on each side. The vegetables, which I turned over several times while cooking, also cooked in the same way. I sprinkled them with sesame seeds when I was baking the necklaces and vegetables.

P.S. I have already tried to make similar necklaces from pork cuts, and they also turned out very tasty.
